Barton Seaver is a chef, author, speaker and National Geographic Fellow working to restore our relationship with the ocean, the land, and with each other—through dinner. He believes food is a crucial way for us to connect with the ecosystems, people, and cultures of our world. In 2009, Esquire Magazine named him “Chef of the Year.” Seaver has since left the restaurant business to use his knowledge and experience to link seafood to broader socioeconomic, ecological, health, and cultural issues. Barton recently joined the board of Harvard Medical School’s Center for Health and the Global Environment. With Harvard and the support of National Geographic, Barton is working to bring together Boston area hospitals and health care providers with healthier and more sustainable food service opportunities. Seaver’s first cookbook, For Cod and Country, was published in 2011.
Mike von Massow is an Assistant Professor in the School of Hospitality and Tourism Management. He is active in the University of Guelph Sustainable Restaurant Project working on projects ranging from food waste to gratuities to the relationship between front and back of house and the implications for service quality.
